Here's a recipe for any vegetarian on a tight budget &/or a busy schedule. The great thing about this recipe is that you can find the ingredients in a local market and you only need (just like the morning smoothie) three ingredients!
*One can of Vegetarian Chili & Beans.
*Shredded Cheese of your choice.
* Soy/Tofu Chorizo.
1. Heat the chili & beans in a pan. Stir occasionally.
2. On a separate pan: Cook 1/3 of the soy chorizo with a small amount of oil.
3. Mix in the soy chorizo with the chili & beans & serve in a bowl.
4. Add the shredded cheese on top.
You can easily make this dish vegan by using vegan cheese instead of regular dairy cheese.
