Veggie Tostadas: Mexican Independence Day!

Happy Mexican Independence Day! Today marks the day when Mexico put an end to the dominance of the Spanish in territories of New Spain on September 16, 181O. The speech given by Mexican revolutionary Miguel Hidalgo will be yelled all across Mexico tonight, signifying freedom against the Spanish and rightfully taking back the land of our indigenous forefathers. That being said, Mexico is a fascinating place rich in extreme history and culture; and what better person to share an authentic recipe than a descendant? Here's my favorite 3-step tostada recipe to get you in the spirit of Mexican independence:

Tostadas Vegetarianas: ¡Día de la Independencia!

¡Feliz Día de la Independencia! Hoy se conmemora cundo México le puso un paro a la dominación de los españoles en los territorios de Nueva España el 16 de Septiembre de 181O. El discurso pronunciado por el revolucionario mexicano Miguel Hidalgo se grita en todo México esta noche, significando libertad contra España y tomando por derecho la tierra de nuestros antepasados indígenas. Con dicho esto, México es un lugar de historia extrema y cultura rica ¿y qué mejor persona para compartir una receta auténtica que un descendiente? Aquí está mi receta favorita de tostadas para conseguir el espíritu de la independencia de México:
